Not sure if there is a perfect answer. Our old shop had tin and it is loud as heck especially if you have a big shed and high eve heights. If it is empty and the doors are shut a basic conversation can be a challenge. We eventually put in finished panelling which helps with the sound and looks nice but it is darker and hard to mount stuff to. Have two friends one put in the sound tin which was perforated and it helps a bit on the sound but is a big pain to keep clean. Another put plywood on the botton 8' and painted it. That helped the sound but the painted plywood stains easily and does not clean up well and after a few years looks dirty. We put 1/2" plywood and covered it with FRP. It helps on the sound and is super white and easy to clean. Doesn't cost much more than going with 3/4 plywood but takes some time to install.
