Subject: Grilling an Iowa Pork Chop


Cherokee County, Northwest Iowa
Head meat cutter at grocery store told my wife to take an Iowa Pork Chop, place in on a grill at med to high heat, stand it on "end", don't even bother looking at it, grill for 30 minutes, remove and serve. Tried it at noon today-the chop fell over towards the end (I came home a little late, didn't know what she was doing, and found chop on its side, but had been cooking for 35 minutes already). Excellent. Maybe we were the last in the world to hear about this trick, but if you haven't tried it, I encourage you to do so. One hint, butcher said to ask your meat guy to try and stand the chop up on its end at meat counter, some are cut at a slight angle, and won't stand.
