2. An Iowa Chop, by definition, is a bone-in, center-cut loin chop, and must be between 1 1/4 and 1 1/2" thick. Reminds me of way back when (early mid 90's). I was in a major east coast city grocery. and went to the meat counter and ordered Iowa Chops. Butcher had no idea what I was talking about so I explained that it was a 1 1/2" thick pork chop. Being the safety minded employee, he tried to explain why he could not sell me something that thick as it would never cook through and I would die. No way I could sway him into selling me the chops. Roasts about 2 - 2½" thick were laid out in meat counter. Didn't matter. |
