I don't think you are doing anything wrong. Combine performance goes to pot in a hurry when you get the shoe out of level, either side to side or fore and aft. So it is clean grain with losses or trash in the tank. Try plant and run on the contour as much as possible.
The old IH combines and some European combines in Italy had/have 4 way leveling systems that try to keep the shoe level when going up and down hills to control this problem, but those systems get expensive in a hurry. Guy once jokingly told me that farming hilly land was not twice as hard as flat land, it was four times as hard.
