The Prime Rib must be history by now. What size roast did you start with and how long do you have to cook it at 240 degrees to get the 128 degrees that you stop at?

Black Dirt Prime Rib is prime rib seasoned with the very dark topsoil found only in the Mt. Pulaski, Illinois area. It imparts a unique flavor found nowhere else on this planet. J/K, it's prime rib cooked by the one and only black dirt!
