I have one cheap Kitchen Aid santoku knife that I use all the time and the high priced German Heinkels

) chef knives stay in the cupboard. IMHO, expensive knives are a waste of money. A set of good Victorinox with the molded handles will cut as well as any. But all knives must be sharp or they don't do the job, so buy a good sharpener and a steel to keep them in good shape. And learning how to properly use them helps too.

Victorinox was recently rated #1 in the mid priced knife range by a panel of pro chefs and home chefs. My Victorinox santoku is the knife I use 95% of the time for preparing meals.
