Speaking of walnuts, I can't wait to crack all the walnuts we have at home and try this recipe:

Candied Nuts

2 lb nuts
2 egg whites room temp
2 tbsp water
2/3 cup dark brown sugar
1 1/3 cup white sugar
3 tsp salt
1 tsp cayenne pepper
2 tsp ground cinnamon

300 * oven

Add nuts to large bowl. Whisk egg whites and water until frthy. Pour over nuts and stir to coat. In separate bowl, mix sugars, salt , pepper and cinnamon. Pour over nuts and stir to coat. Spread on parchment lined baking sheet. Bake 30 minutes, stir from time to time, and separate nuts if stuck. Store in airtight container.


When I think of the Pioneers (forgive me, I'm Canadian) I always admire their resourcefulness. I imagine they would make a lovely pie such as this one:

Carrot Pie

1 1/2 cups finely mashed cooked carrots
1/2 cup apple sauce
1/2 cup brown sugar
1/2 cup white sugar
2 eggs, well beaten
1 tbsp flour
1/2 tsp salt
1 tsp cinnamon
1/4 tsp each nutmeg, and allspice
1/8 tsp cloves
1 tsp vanilla
1/2 cup evaporated milk
1/2 cup skim milk

Combine ingredients in order given. Blend well. Pour into 9" pie shell. Bake 425 for 30 minutes. Reduce to 350 and bake 25 minutes longer. Cool and top with whip cream.
