BEST pork in the World is produced and processed in Spain.
Several different hog raising methods there, thus several cultivated background flavors to the end product.
Also, they are FAR advanced in Processing their product as compared to simple commodity type countries like the usa.
They took a decent product, and have made literally ALL of that into higher value Real Delicacy product.
Keep in mind, even hogs at $1 per pound on the hoof is only $3 per pound for most cuts in the store ( if everyone stays honest ).
USA has basically made pork into an EXPECTED cheap meat ( the othe white meat ).
CUT that cheap supply in half, then make a True delicacy out of the other half and gross sales actually would be at a Double UP over current gross sales of said supposed industry.
One thing about it, the pigs in the usa, might not be the pigs themselves...moreso the corp "cut chisel and screw" business model so commonly accepted in the usa.
