NW Iowa | Generally we will just roll in and rake and bale it. Dad has a green 568, dad and brother have a red BR560. The NH will eat stalks better than the deere and shine in tougher conditions. I think it makes a better bale also.
Now, we've been using a cornhead with knife rolls on it the past few years. Prior to that it was the standard 643 head. The knife rolls with cut the stalk a little more, which is nice - end up with more fines in the bale. Custom bale behind a chopping head - those bales are almost like silage pieces in the bale and a little more difficult to bale. After raking, it looks like the field is bare.
Personally, I like the knife rolls on the head for both bedding and feed. Longer stalks keep the bale a little too tight and it's a pain to spread it out. The knife roll stalks are nice to manage breaking the bale up and spreading it around. Chopped stalks i think would be a nightmare trying to spread.
Now if you are using a bale processor to spread, most of what i wrote is probably irrelevant.
