Beef cow herd from scratch?

I don't mean to start a red vs green or Ford vs Chevy fight here, bit looking for some advice on starting a little beef herd. I own 20 or so milk cows and their replacements, plus feed 180 ish holstein and jersey bull calves from bottles to fats. I've always wanted to have a little beef herd but just never done it. My girlfriend and I are talking about buying a few maybe 10 heifer calves and starting a little herd to utilize some lower quality hay and as sort of a little project we can do together. I guess my only real questions are what breeds should we look for and where would I find bottle heifer beef calves? I know they will 2 years before we would see any calves and it's a lot of work to get them there but it's nothing I'm not used to. Plus, I think we could make for a gentler group of cows raising them from babies instead of buying yearlings or off the cow( she was raised in town so she is not used to working with wild cattle etc). Thanks for any opinions.
