From what I have read/heard, the organic market does not have unlimited potential..... they are only so many people/ families who are willing to pay the premium for organic food.  And that organic milk market has approached saturation level.  In other words, the organic milk market is getting to the point where there is more organic milk than there is market.... it's just the organic milk has a higher price tag, and a higher cost of production to boot.
