Blanche, cool, cut off, freeze.  That makes the best tasting corn hands down.  I've tried about every other method possible, but nothing compares in taste, and that's not just me saying that, all my kids and relatives agree.  Most of the time, there is only my wife and I, so I just put two ears worth of corn per bag, and it's all we eat at a meal.  For bigger crowds, we just get out more bags.
