As a once upon a time cabinet maker with almost 40 years of breathing saw dust, I would recommend having the lumber kiln dried. However, I would not recommend the entire process unless you just want to use your own lumber. I have done a few smaller projects over the years where customer provided the lumber. Cull rate was always high. Quality was usually low. Had to straight line rip and size all boards. Lot more work to get a satisfactory finished product. I would recommend going to cabinet shop supplier. Hand pick lumber. Any species, any size, dry and stable, high quality and ready to use. Probably not a whole lot more money (if any) than turning trees into finished quality lumber. Not trying to discourage you from making your own lumber, just sharing some thoughts and opinions gained through experience. Good luck.
