Personally I like leek and potato soup best. First saute a couple of large chopped leeks, white and light green parts, a carrot, a stalk of celery in butter or butter and olive oil then add two or three cloves of garlic and cook until soft and then add about 4 cups of diced potatoes with enough water or chicken broth to cover and simmer until done. Then puree with a hand blender and add some cream or half/half to get the consistency you want.
My wife used to make good old greasy potato soup with bacon, onion and potatoes but then she gave up on eating bacon so that recipe is now history.
