On our dryer it has a high limit for temperature if the unload stopped and the corn gets too hot it will kick and burners will shut down. And on the top is a pressure switch if the dryer does not fill when pressure drops dryer will shut down. On the unload auger if the leg quits running taking it away a door flips up with a mercury switch on it and dryer shuts down. So pretty much if things go wrong it will shut down if all the safety switches are working properly
