| We also had old birch cabinets. Ours had been vanished w/o stain. I sanded the varnish off and then stained them with a regular wiping stain and re-varnished them, ( 3 coats!) They turned out very nice. A gel or ink stain will work to darken a previously finished piece but you will lose some of the definition of the grain. Make sure you treat each piece the same, so they will all look the same. A change in the process will change the way they look. Practice with a scrap or hidden piece. The important end result is that your wife is happy.
