NE SD | I grew up eating Tiger Meat. Many many many pounds of it over the years. It is very popular and it is sold in two grocery stores and a butcher shop that many around here frequent. You can usually get some at least a couple times a week stopping by the local filling station during happy hour.
I make Tiger Meat for special occasions. First, it is not ground hamburger as mentioned above. It is made from either ground round, or if you're really flying high, ground sirloin. There is absolutely no fat in the mix. Fat is what carries the bacteria that will make you sick.
Second, when you make it, there is enough salt, pepper, onions and green pepper chopped in there to kill pretty much anything bad. When you lay it out on the counter you pretty much coat it with pepper. My recipe uses eggs and crackers, but none of the grocers or butcher shops do as I'm sure the eggs add another level of liability, though the packages say to "cook throughly".
