Choose what gap you plan to operate at the most and adjust the right plate so the gap will be centered over the middle of the rolls. then I would adjust the left (hydraulic) plate to desired gap and set linkage so it's range of motion is in the middle of stroke. Gap should be centered over rolls. I would estimate deck plate movement at around 1 inch. Hardfacing can be pretty rough, They will wear fast enough.
