Lots of cow manure for your pumpkins. Doesn't even need to be fully composted although it helps for the weed and pathogen control.

You need to enclose that garden if you want these price pumpkins or anything else to survive rabbits.
If you have a camcorder, set it up together with some lightbulbs for one night to see what's eating your veggies.

If you have untreated alfalfa or radish seeds, have your kid grow them for sprouts.
Put a plank on part of the seedbed to show him how strong these little seeds are, how they can crack asphalt or lift a plank.
Google "sprout experiments" for more ideas.

Cherry tomatoes would be a great fruit to grow for a small kid. He might even leave you a couple for decorating a dish one day. ;)
Set up a challenge, like every year he must pick up 5 to 10 new plants he hasn't grown before, and have him keep records and pictures and drawings of what he planted, how the seed looks like, the plant at different stages, pictures of the most common pests or disease, etc. His own gardening encyclopedia. I'd keep the garden 100% organic for safety. Learn one new weed every year. And while catching slugs and snails at night, learn two new constellations every year. The two dippers and the North Star are always useful when the GPS is down! ;)
