I'm still considering the Bread Machine, just deciding which one.
I can always go back to going caveman if I feel nostalgic or hate the Machine made bread.
OH!! I did Marry a Bread maker as well, but she dosn't enjoy cooking as much as I do...and I like to eat. LOL!
I looked at getting a Kitchenaid, but our old Mixer is just as well suited for mixing and kneading, and has been used several times to make bread.
It saves some time, but not much. It's the proofing, and rising, and fussing that eats the time. Maybe I need to put a small Kitchen in the barn, and make bread while wrenching. LOL!
Nothing like a little Hytrans and Rotella to bring out the flavor of a good loaf of Rye.;)
It's looking like one of the Japaneese Zildji jobs so far...
Chimel, that kind of fussing around would kill me.
I kitchen tinker when it's too cold to get anything done, otherwise I have 30,000+ Bushes to trim all winter, a house to heat with wood, and a full day of work waiting in any direction I go out of the house.
I'll try your take on French Bread, and probably during the first blizzard of the season. Looks good. Thanks!!
