Iowa City, IA | It's the so-called "shake to undo" function. You are not alone, you may want to check the Apple communications board. It seems that some phones are a bit more touchy than others. I suffer this problem only very rarely. Apple has been asked on multiple occasions to have options to disable the function, but so far I don't believe they have one. If you hit the sleep key on the top right of the phone before setting it down, it will not inadvertently "shake". I think its a pretty poorly thought out function, but I do use it sometimes when writing emails, or making small edits to documents, it's the equivalent of ctrl+z hotkey.
