Subject: Ever had Conchas?



Texas/New Mexico Stateline
Mexican sweet bread. "Conchas" means shells. I feel a little silly, because after living in Tex-Mex country my whole life, and seeing these breads at the grocery and other places I had never had any until last week. We were at a cafe and they had some for sale, and thought, "hey, let's try some". They were good!

Not super sweet, they are a sweet yeast bread kinda like say a cinnamon roll dough, but more flaky/layered, with a thin cookie like layer on top. Wife likes all things bread baking and made a batch of her own. Like most breads there are lots of different variations. I can't tell you much about the recipe she used, other than it was a little more dense than the store bought ones. (which were still hand made locally)

Recipes vary from one egg to as many as 7 eggs for a batch. I think she said this recipe took 3 eggs. They are a lot of work because not only do you have to make the bread part, but you also have to make the sweet covering.
