Subject: Drying wheat to raise protein

Someone call me out if I'm crazy, but I've noticed that wheat proteins go up as moisture goes down. Question- is there a certain amount/guideline to follow as to how much protein goes up as moisture goes down? example would be last year. Same variety on same field. Even field. Took some at 14. Took some at over 15. Dried the 15 down to under 14 and the result protein was over .5% higher.
